As reported PLOS ONE, a team of scientists from the University of Stellenbosch in South Africa, led by Mathabatha Setati, conducted a study and found, that the taste of wine and grapes is determined by microbes, so wine, made from a single grape variety may have different taste and different flavors. Scientists from the University of Stellenbosch, South Africa, studied microbes in three vineyards of Cabernet Sauvignon in Polkadrai regions, Stellenbosch, South Africa, and found, that the taste of wine is largely determined by microorganisms in on vines, than the other factors, that contribute to the process of fermentation and aroma of wine.
